So I finished eating this before I had a chance to take a picture of it. But trust me–it is really good and really light, yet very sweet with not a trace of sugar or other carb laden sweetener. Of course, the secret is in the Pyure granulated stevia blend and stevia sweetened chocolate chips that are always a part of my recipes. This cake can be made pretty quickly, which is a good thing when you are craving something sweet in a hurry. From start to finish, this takes maybe 5 minutes without making the topping; but if you want the topping, the extra steps only take about 1 to 2 more minutes.
5 Minute Chocolate Mug Cake
1 egg
2 tsp melted butter
1 tsp vanilla
2 tsp granulated stevia blend
Blend the first three ingredients in a small bowl. Slowly pour the melted butter into the egg mixture and beat well.
3 tbsp cashew flour
1 tbsp cocoa powder
1/8 tsp baking soda
Grind the cashews in a coffee grinder until finely ground. Pour into another small bowl. Mix in cocoa powder and baking soda until smooth. Smash any lumps down as you find them. Pour dry ingredients into egg mixture and mix well. Fold in 2 tbsp stevia sweetened chocolate chips.
Lightly grease the bottom of a medium to large mug with coconut oil. Pour cake mix into the mug and smooth out flat.
Microwave for about one minute and 30 seconds; then let cool while you prepare your topping.
3 tbsp heavy cream
2 tsp granulated stevia blend
1 tsp vanilla
Pour all ingredients into a bowl and, using a hand mixer, beat until thick.
Place cake in a bowl upside down. Dollop cream on top of your cake and garnish with fresh berries.
